How to Store Herbs and Spices So They Stay Fresh

Dried herbs and spices do not spoil in the way fresh food does, but they do fade. Exposed to heat, light, air and moisture, their essential oils break down and the flavour quietly disappears. A few simple storage habits will keep your spice shelf tasting vivid for far longer.

Keep them airtight

Air is the main enemy. Every time a jar is opened, a little aroma escapes and a little moisture creeps in. Store herbs and spices in airtight jars or containers with a tight seal, and decant bulk purchases into smaller jars so the container is always fairly full. Less air in the jar means slower flavour loss.

Away from heat and light

The cupboard above the stove is the worst place for spices, even though it feels convenient. Heat accelerates the loss of volatile oils. So does sunlight, which is why clear jars on an open shelf look lovely but fade quickly. Choose a cool, dark, dry cupboard away from the oven, kettle and window.

Watch out for moisture

Steam is a hidden culprit. Never shake a spice jar directly over a simmering pot — the rising steam clumps the contents and invites mould. Instead, measure into your hand or a spoon first. Always use a dry spoon, never a wet one, when scooping.

Whole lasts longer than ground

Whole spices keep their flavour much longer than pre-ground ones because less surface area is exposed to air. Where you can, buy whole and grind as needed — whole peppercorns, cumin seeds and cinnamon sticks all reward the small extra effort. A grinder or a quick toast in a dry pan releases their aroma beautifully.

How long do they last?

As a rough guide, ground spices are at their best within about a year, whole spices up to two, and dried leafy herbs around one to two years. They are still safe well beyond that, but the flavour dulls. A quick test: rub a pinch between your fingers and smell it. If the aroma is faint, it is time to replace it.
